Migrate off headless-ui

We're currently depending on headless-ui which never got a 2.0 release for vue.js There is an alternative with radix-vue which we probably should switch to in preparation for the upcoming portfolio management features.

• Replace the headless-ui-dependency with radix-vue where appropriate
