Add Spotlights [Earth&Environment]: Lynx, MeshIt, Golem

created branch 319-add-software-spotlights-lynx-meshit-golem to address this issue

I restarted the whole process with this new branch.

• Recreated _spotlights/{golem,lynx,meshit}.md

• Fixed paths, licenses and added "date_added" to them

• Added dirs assets/img/spotlights/{golem,lynx,meshit} with the relevant images

• lynx_logo.png is now only the "LYNX" name

• I added only for lynx a jumbotron image; for the other two I just fixed the relative path to point to the img/spotlights/{golem,meshit}/RelevantImage.png

This should be it as per CONTRIBUTING.md.

Everything is pushed in this 319- branch (commit cfcf50e9) - @christian.meessen can you please review?

OK I also installed jekyll and revised the stuff. With the last commit (be801eba) everything works as expected on my pc.
