Mermaid rendering gets broken on Deployment

When deploying to pages the rendered UML diagrams from mermaid get their text sections cut off.

This has been discussed here and in the mermaid repo but not yet resolved.

Suggested solution:

Switch to graphviz or plantuml since they do not seem affected.
