Add versioned tagged images and changelog

Description

• there is need (by Norman) for versioned images (currently he's using the hash of the latest image)
• the name should be a semantic version number like 1.0.0 without any prefixes or suffixes
• additionally we can add a Changelog.md to refer to that version number for future updates
