Release new version

Release unhide-docker after a release if unhide-ui and unhide-data harvesting, update the repos with the corresponding commits in the submodules.

Prepare for release still todo:

• update the metadata and the versions. merge into main an create release. ggf we also want to add a CI, but that might be for another time.
