Fix Bug #55 - Add missing requirement for docs

This is a bug fix for Issue #55 (closed). The missing requirement has been added.

  • ipykernel requirement is added to the docs requirement so Jupyter notebooks can be built for the docs
  • sphinx-book-theme is not used in the official docs built. It is removed as a requiment for the docs.
