Ammend Category Schemas with our Defintions of the Category they serve

In todays TF-DP Meeting it came up that the Information Portal should display explanations of what we consider to belong to a certain category.

Our best definitions of this are currently buried in the CCT1 Schema Version 1.0 PDF.

We should make them explicit in the respective JSON Schemas for each category. Maybe even adding fields of the kind "Explanation to display to user", and "Prototypical examples", in addition to the current (unused) "description" field.
